When Japan occupied China during the Second World War, Chinese " jiaozi" were brought to Japan, where they in turn became known as " gyoza" and were more typically pan-fried.
JONATHAN MOY: Our dumpling is kind of like a hybrid between a Chinese dumpling, kind of a thicker skin, more hearty dumpling, and a Japanese gyoza, so it's pan fried on both sides and then kind of steamed to finish the cooking process.
